Appliances and interior restaurant design
It's impossible to overemphasize the importance of appliance selection and its integration into the overall scheme of restaurant kitchen design. For this piece of equipment, also consider different types of ovens, such as a fast-working convection oven or a cook and hold model for high volume kitchens. For pizzerias, a pizza oven is probably a must, but for multipurpose cooking that includes pizzas, perhaps a conveyor oven would fill the bill. Whatever your choice, work closely with your equipment vendor and/or designer to assure that the restaurant layout and design allows for some flexibility with the placement and functionality of the appliances.
Some of the same considerations will need to be made in the selection of a commercial freezer(s). Most interior restaurant design will incorporate one or more spaces for chest-type and/or upright freezers. Selection of these appliances will be determined by several factors: price, budget, unit size, floor space, energy costs and personal preference.
